We call it coconut bread this is one

Coconut Bread 2

4 oz Margarine
6oz Raw cane sugar
10 oz Wholemeal flour
2 tsp Baking powder
1/2 tsp Ground cinnamon
6 oz Freshly grated coconut
1/2 pint soy milk

Directions: Cream the margarine and raw cane sugar until well blended. Sift the flour, baking powder and ground cinnamon in a separate bowl. Stir in the grated coconut. Add the dry ingredients alternately with the soy milk to the creamed mixture, mixing it thoroughly to a thick dough-like consistency. Divide the mixture and shape into buns with floured hands. Place the buns on a greased baking sheet, spacing well apart, and bake in a preheated oven at 180░ until risen and brown. Makes 8ľ10.

INGREDIENTS :

  • 3 cups flour
  • 3/4 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 1/3 cups shredded coconut
  • 1 1/2 cups milk
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract.

METHOD:

1.       Preheat oven to 350 degrees

2.       Combine flour, sugar, baking powder, salt, cinnamon, nutmeg and coconut in large bowl.

3.       In separate bowl, beat milk, egg, oil and vanilla extract together until well blended.

4.       Add liquid ingredients to dry ones and stir to blend. Do not over-mix. Pour batter into a 9x5x3 inch loaf pan. Bake for about 1 hour until a cake tester inserted into the center of the cake comes out clean.

5.       Cool 10 minutes in the pan, then invert the bread onto a cake rack to cool completely. Make 10 to 12 servings.

INGREDIENTS:

  • ╝ butter

  • 1 tsp. vanilla
  • 3 tsps. Baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • ╝ tsp. nutmeg
  • 2 cups grated coconut
  • 1 cup Evaporated milk

METHOD:

1.       Cream butter and sugar.

2.       Add eggs and vanilla and beat for 2 minutes longer.

3.       Sift together flour, baking powder, cinnamon, and nutmeg.

4.       Add flour mixture, and coconut to butter and sugar mixture alternately with Evaporated milk.

5.       Spread evenly in greased shallow baking tin 8ö x 12ö.
