I spent nearly 6 months in San Pedro Sula back in the mid 80s and enjoyed the local  variations of Fish Soup (or Stew) offered in most restaurants.  I loved most of them made with fish but did not care for those using conch.  I've looked online for a "Honduran" fish soup recipe, but so far have not found one that looks like what I remember.  If anyone would care to post their favorite "fish soup" or "fish stew" recipe it will be greatly appreciated and bring back a lot of memories.  We often ate lunch in the old "Grand Sula Hotel" on the square and the chef there was great.  The daily spread he prepared could include venison, homemade cold cuts and goat cheeses or other surprises.  And the homemade desserts were also excellent - his coconut pie and pineapple pie soon became my favorites.
