Red Bean Soup

2 lbs. Red Beans
2 lbs Pig Tail (optional)
1 med. onion - chopped
1/2 lg. green pepper - chopped
1 celery stalk - chopped
3 spregs parsley - chopped
2-3 large fegs garlic - choped
1 spreg fresh thyme
1/2 lb. pumpkin diced
1 tbs. A-1 Sause
1 tbs. Heinz 57 Sauce
1 Tbs. Worchestershire Sauce
1 pkg. Sazon
1/2 can chopped tomatoes
1 Tbs. Mixed Season (or to taste)
1 can evaporated milk (optional)

Place pigtail in pressure cooker and cook for aprrox 30 minutes or until tender, throw off remainig water from pigtail and add red beans and ingredients in pressure cooker and cover with approx. 8 cups water (3-4 inches)
over the ingredients. Pressure for 20 minutes after pressure cooker starts to whistle. If cooking in
pot, may need to cook for approx. 3 hrs. Can also be done in slow cooker.

Add Sweet Potatoe and dumplins after pressure cooking is completed. You would only need to cook uncovered, approx. 15 min. or until potatoe and dumplins are cooked. Then if desired at milk.

Clap Gosh! girl... thats my favorite soup...I can sip a pot of this all through the day. I did not put milk in this unless we are making a version called 'Habichuela con Dulce'(sweet beans), which is consumed mostly on Good Friday.
 
Habichuela con dulce  is stew peas(mostly red beans) down to a mush (I sieve it; but leave a few beans whole) then you add coconut milk, evaporated milk, cinnamon, whole cloves, sugar, chunks of(real)sweet potato & raisins... let it boil down to a thick mixture.... plop plop plop!!! Tongue
