thanks for the recipe, but i don't think it's what i'm looking for.  I think the trinidad sponge cake calls for butter.  It's not a traditional sponge cake.

it took me a while but I found it.

SPONGE CAKE     

11 egg yolks (use your whites to make an angel food)
2 c. sugar
1 c. scalded milk (let cool)
1 tsp. vanilla
2 1/4 c. sifted cake flour
2 tsp. baking powder
1/2 c. melted butter

Beat egg yolks with sugar until light colored and fluffy. Add cooled milk. Add vanilla. Sift flour and baking powder three times. Add to egg mixture. Fold in butter. Bake in 2 (9" x 9" x 1 3/4") pans at 350 degrees about 40 minutes. If in a long pan, 50 minutes.
