Give credit where credit is due.  It is extremely uncool to post recipes, news articles, and materials from other websites without the owner's permissions and without giving them credit, not to mention illegal in most cases!

Please read Guidelines for Submitting News Articles for some guidelines on what you can and cannot do.  Although recipes are not protected under copyright in the U.S., narratives accompanying the recipes are copyrighted, and fall under the rules posted in the guidelines.

So, it's not illegal to copy recipes and formulas in the U.S. since they are not protected by copyright, but it's not cool to copy it and not give credit.

Always, always, always, always give credit to the person, company and/or website you are quoting material from.  Always, always, always link to their website.

If these guidelines are not followed, CaribbeanChoice management and the system administrator (me) get complains.  We do not like complaints.  We like happy visitors.

So please follow the guidelines when posting material on this website.  Thank you.

Honduran Pollo Con Salsa (Chicken In Sauce)


Recipe #76980

      Hours 15 min prep


3 ½      lbs frying chicken, whole

¼         Cup cooking oil

1/8-1/2 Teaspoon hot chili powder

¼         Cup ground sesame seeds

3          Whole cloves

1          Cinnamon stick

1          Teaspoon brown sugar

¼         Teaspoon fenugreek seeds

1/2       Teaspoon salt

1/4       Teaspoon pepper

2          Cups boiling water

2          Tomatoes, chopped

1          Green pepper, chopped

1          Onion, chopped

  1. Brown chicken in oil on all sides; remove from pot.
  2. Add chili powder, sesame seeds, cloves, cinnamon, brown sugar, fenugreek, and salt and pepper; brown in oil.
  3. Add remaining ingredients.
  4. Simmer until tender.
  5. Add chicken and cook until tender, turning occasionally.
  6. Add more water if necessary.
  7. NOTE: Peanuts can also be included in the sauce.
  8. Pork, instead of chicken, may be used.
  9. Woman's Day.

"HONDURAN Recipes"

 Honduran Yucca Pie

In the poorer regions of Honduras yucca root is one of their staple crops. It grows anywhere, leached out soil, muddy river banks even in sand. It’s a lifesaver to those living on land where nothing else will grow.  As well, it need not be germinated from seed; merely plant a stalk or branch from another bush and roots will start to grow. Amazing plant. Alas, yucca on its own fails to be a gustatory treat. In soups or boiled and served with a sauce of some sort it is OK, like a highly glutinous potato. It takes a bit of creativity and savvy to whip up anything special where the main ingredient is yucca. So, check out this desert recipe. Our good friend Dona Elma Bodden hails from a Miskito Indian village Raista, on the inner shores of Laguna Ibans in the Mosquito Coast region. Her kitchen is locally renowned. The tourists who come to tour the Raista Butterfly Farm, the staff of the NGO Mopawi (internationally funded non-profit group that helps with local development projects in indigenous communities) and a few locals all dine there regularly. I asked what sort of “cuisine” could possibly be made with yucca and she delivered. This is a variation on pumpkin pie, dense, sweet, chewy and wonderfully flavored.


  • 1/2 cup flour
  • 1 cup sugar
  • 2 cups grated yucca
  • 2 sticks margarine or butter
  • 2 cups coconut milk
  • 2 tsp. baking powder
  • 1 cup of coffee
  • 3/4 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt

Topping for pie:

  • 1/2 stick of butter
  • 1/2 cup sugar
  • 3/4 cup powdered milk
  • 1/2--3/4 cup water


Combine flour, salt and baking power. Cream butter and sugar, add spices, coconut milk, coffee. Mix in dry ingredients. Pour into greased, floured baking pan and bake in a 375 degree oven until solidifies and turns golden brown on top. For the topping, melt butter, add sugar, powdered milk and water. Hydrogenate by stirring while heating. Cook until thickens. Pour over top of pie.

Honduran Huevos Con Salsa De Chiles (Eggs Poached in Chili Sauce)

2 servings 15 min 5 min prep

1 (4

ounce) can hot green chili peppers


teaspoon all-purpose flour


teaspoon salt



  1. Sieve chili peppers and their liquid into 7 or 8 inch skillet.
  2. Stir in flour and salt.
  3. Bring to boil and simmer for a few minutes, until slightly thickened, stirring constantly.
  4. Space 4 eggs on top of chili sauce, cover, and simmer over low heat until poached to desired doneness.
  5. Serve with chili sauce from pan.
  6. Woman's Day.
