Hello All,

We just got back From Jamacia. And I fell in love with the jerk chicken stands. We brought back some wakerswood jerk marinade we let the chicken marinade for about 6 hours cooked it on a gas grill (it cold here in N. Michigan). And it tasted way too strong.

Its too cold to use my firewood smoker and I am quite versed in smoking and yes, I know it should be smoked but I was really looking forward to that taste.

Now to my question. When in Jamacia the jerk seasoning was much more liquid than the marinade I used. Do you think that a dillution with vinegar would help? i talked with locals and they used vinegar. I would be willing to wait for the smoker but I thought I would run this by all of you.
