Key West Hoagie
1 pound conch, cleaned and cut into large cubes
6 Hoagie rolls
1/2 cup AP flour
1/4 cup Masa Harina
1 red onion, sliced
2 ripe tomatoes, sliced
1 head lettuce, shredded
Mayonnaise to taste
1 fresh Key Lime
1/2 cup mango salsa (recipe below)

Combine flour and Masa in a gallon zip top bag, season with Cajun seasoning, seal, and shake to mix. Toss conch in to bag to coat with breading. Shake off excess breading and deep fry at 375 until golden brown.

Coat bottom half of each hoagie roll with mayonnaise then pile on the conch. Top with onion, tomato, lettuce, and mango salsa. Drizzle with Key Lime to taste.

Mango Salsa
2 fresh mangos, diced
1/2 red onion, diced
2 Serrano chilies, diced
1 banana, diced
1/4 cup chopped fresh cilantro
2 cloves garlic, minced
1/4 teaspoon Cumin
Salt & pepper to taste

Combine all ingredients in a non-reactive bowl. Place 2/3 of the salsa into a blender or food processor and pulse five or six times then fold back into the salsa. Refrigerate at least one hour before serving.
